3 cups cold cream

250 g chopped coarse white chocolate

4 eggs, yolks and whites separated

½ t. vanilla

2 cups quartered strawberries

¼ – 1/3 cup Strawberry Dessert Wine

Melt the chocolate with the cream and vanilla in a bowl over boiling water, stirring constantly until melted.

Remove from heat and let it sit for 3 minutes. Add the egg yolks and stir.

Put the egg whites in a small bowl and beat with a mixer at high speed until foamy. Take a heaping tablespoon of the white egg foam and mix it with the chocolate mixture, then add the rest of the white egg foam to the chocolate mixture and stir carefully. Divide the mixture into 6 dessert dishes. Cover and refrigerate it for 3 hours.

Put the strawberries and dessert wine into a small saucepan. Cook on low for approximately 5 minutes until the strawberries soften. Pour strawberry sauce over each dish. Sprinkle with grated chocolate if desired. Makes 6 servings.
